Oatmeal raisin cookies

Whoever of you that know me, know my passion for cookies. On the streets of Shanghai is common to find people from XinJiang selling raisins and other dry fruits thus my idea of making oatmeal raisin cookies. For the oatmeal, I would not recommend you to go to CityShop, where they will charge you 90 kuai for a package of Oats, you should rather get any brand of oats that you can find at the Chinese grocery store, they are cheap (around 20 kuai) and I would say pretty good. Just pick the one with big flakes (traditional oats) rather than the quick one (small flakes).

Ingredients (for 18 cookies):

  • 2 cups oats – 180 克燕麦
  • 1 cup flour – 128 克面粉
  • 1 cup raisin – 165 克葡萄干
  • 1/2 cup butter (softened) –  113 克 黄油
  • 1/2 cup white sugar – 60 克白糖
  • 1/2 cup brown sugar – 110 克红糖
  • 2 eggs – 2个鸡蛋
  • 1 tsp vanilla flavor – 1 匙纯香草精
  • 1 tsp baking powder – 1匙 发面苏打

Preheat oven at 180 C. In a bowl place white sugar, brown sugar and butter. 预先加热烤箱对180摄氏 度。 在碗放入白糖,红糖和黄油。

Mix till soft 搅拌直到平稳和乳脂状

Add oats, flour, vanilla, baking powder, eggs 添加燕麦片,发面苏打,纯香草精,鸡蛋

Mix everything together until fluffy. 混合直到结合

Add raisin and mix well. 添加葡萄干混合直到结合

On a oven tray, above a baking sheet, drop a tablespoon of the mixture. 下落大约1把大汤匙面团(35克)在准备的烤板上

Bake for about 10 min or until golden brown. 烘烤大约 10分钟,或者直到金黄褐色。

One cookie provides:

  • Calories: 173 (from fat 57)
  • Fat: 6.3 g
  • Carbohydrates: 27.5 g
  • Protein: 2.8 g
