Cream puff is a popular dessert made of choux pastry filled with cream.
Choux paste is baked into small round puffs that are served cold with a sweet filling and sometimes a topping. A cream puff has a filling of whipped cream or pastry cream. The puffs may be also left plain or decorated with chocolate sauce, caramel, or a dusting of powdered sugar.
The Choux pastry can also be used to prepare salty dishes, like with a tuna and mayonnaise filling.
Ingredients for Choux pastry (for 8 puffs)
- 125 ml water
- 2/3 cup flour
- 1/4 cup butter
- 1 tsp sugar
For the filling: lemon pastry cream
In a pot place water, butter and sugar. Bring to a boil.
When the butter is all melted add flour (fast and all together). Mix it up with energy till it gets smooth and comes off the spoon and the pot .
Remove from heat and let cool. Add the fist egg and mix it up energetically.
Then add the second egg and mix.
Pour one tbsp of dough on the oven tray.
Bake in preheated oven at 180 C for about 40 min. Do not take out of the oven till it is completely cooled down.
With a syring fill each puff with lemon pastry cream.
Sprinkle on top powdered sugar.
