Last Sunday afternoon I was home and some friends unexpectedly came over for a visit. Since it was close to dinner time I invited them to eat something together. I really didn’t have much in the fridge and it was raining so I decided to prepare this stuffed focaccia my grandma used to make for my 2 cousins and me when our parents unexpectedly left us at her place for dinner on a Saturday night.
It is a really simple dish and it will literally cost you nothing to make. It has its origin back to the II World War when food was scarce and people had to invent new dishes with what was available,

Ingredients (for 5 servings):
- 1 onion
- 1 can of tomatoes
- 5 tbsp olive oil
- 2 cups all purpose flour
- instant yeast
- 1 mug of warm water
- some black olive
- 1 tbsp capers
Chop the onion and put it in a pan with 4-5 spoons olive oil and some water. Cook it till the onion is soft. I recommend adding water for cooking the onion because in this way you will prevent it to burn and you will make the dish easier to digest.
When the onion is soft, add the can of tomatoes, adjust with salt and cook for ither 15 min. Cover the pan with a lid.
Once the tomato is cooked add olives and capers. Cook for 5 more min and then remove from heat.
While the sauce is cooking, place flour, salt, yeast and a couple of tbsp olive oil in a bowl. Slowly pour in water and mix the ingredients using your hands till the dough is smooth.
Divide the dough into 2 pieces, one slightly bigger than the other.
Take the bigger one and roll it out on a surface covered with flour.
Rub some oil on a oven tray and place in it the dough. Make sure that the dough covers all the borders of the tray. Pour inside the tomato and olive sauce.
Roll out the second piece of dough and cover the sauce. Close the borders using a fork.
Turn the oven at 180 c and cook for about 50 min or until golden brown.
From the nutritional standpoint, this is a pretty balance meal, with a good amount of fibers, no cholesterol and low in sugar. Each serving provides:
