I got this recipe from my mom’s cooking notebook, a little, old memo pad where she has been hand writing all her recipes since I was a little kid.
The stuffed Chicken is a very tasty dish, a bit time consuming but a perfect idea for a special dinner, maybe on a friday or saturday night with friends.
Ingredients (for 4 servings)
- 1 chicken (of about 1 kg)
- 200 g ground pork
- 50 g green olives
- 1/2 cup celery
- 2 tbsp butter
- 2 tbsp olive oil
- 3 slices of bread (just the crumb)
- 1 cup chicken broth
- salt and pepper
- 100 g bacon
- 1/2 glass of dry white wine
Chop the bacon and add it to the ground pork meat.
In a pan heat 1 tbsp of butter and saute’ the bacon and pork
Add salt and pepper.
Soak the breadcrumb in some water and then squeeze the water out. Chop the celery and the green olive oil.
Add all the above ingredients to the bacon and pork meat. Mix well together.
Now it is time to stuff our chicken
In a pan, heat 1 tbsp of butter and 2 tbsp of olive oil, slightly cook the chicken brown from all sides.
Pour in the half glass of white wine and let it evaporate.
Now place the stuffed chicken, the remaining filling and the chicken broth in a baking tin.
Bake at 180 C for about 1 hour. Remember to always keep you chicken wet with it’s cooking juice.
