Tamago is the Japanese word for omelette. It is one of my favorite sushi and it can also be used to prepare rolls in combination with fish and avocado.
It is not easy to make, it takes a lot of practice to get it right, like all Japanese food, it is the result of dedicated attention to details and precision. I still can’t get it perfect but I’m working on it
- 6 eggs – 鸡蛋6个
- 1/4 cup dashi stock (or chicken stock) – 1/4杯鱼肉高汤（或鸡肉高汤）
- 1 tbsp soy sauce – 酱油1匙
- 1 tsp sugar – 糖1茶匙
- 1 tsp mirin – (日本）甜米洒1 茶匙
- 1/2 tsp salt – 食用盐1/2茶匙
Beat all the ingredients together 将所有的材料均匀搅打一起
Bring a square cast iron pan (or Japanese Omelet pan) to low medium heat and spray a bit of vegetable oil. (I didn’t have a square pan so I just use a normal round one). Pour in some of the egg mixture, a very thin layer at a time. 将正方形的铁锅（或日本的煎锅）火候调至中低火，再喷洒少量植物油. （我没有正方形的铁制煎锅，所以我就用普通圆的平底锅). 鸡蛋液，先倒入非常薄的一层，然后逐一倒入.
Before the layer solidify, while there is still liquid, flip the egg over on itself. 在每一层变硬前，当还有液体的时候，就快速翻转鸡蛋。
Using a paper towel that has been dipped into the oil clean the pan. Pour some more egg mixture enough to cover the bottom of the pan. 用厨房纸巾在油里浸一浸，然后用它涂平底锅。 倒入一些鸡蛋液，够覆盖平底锅底部即可。
Flip again a repeat as above till all the egg mixture is used up. Each time you flip the egg alternate from top to bottom so that the same surface of the egg doesn’t get burned. 再次翻转，重复上面的步骤直至鸡蛋液全部用完。每次从顶部到底部翻转鸡蛋 以致于鸡蛋的表面不会变糊.
Since I used a round pan, I had to cut off the borders to give it a square shape. 因为我用的是一个圆的平底锅，我不得不把边切掉，让它变成一个正方形的形状。
You can use tamago to prepare nigri (hand pressed sushi): dip your hands in some water, pull out a small handful of rice and press it within your hand in a rounded-off oval shape. 你可以用甜蛋卷来做nigri寿司（用手按压寿司）：双手用水沾湿，再抽出一团米饭，然后将其放在手中并按成一个椭圆形。
Place the tamago on top of the rice and press gently.将蛋卷铺在米饭上，轻轻地按压使蛋卷和 米饭紧贴一起
Cut a belt of nori with your scissors and and wrap it around the whole finished nigri. 用剪刀将紫菜剪成紫菜条,并用它将整个刚才做好的寿司团绕一圈即可。
