And here we go…it’s Monday again, back to waking up at 7 am, back to commuting for one hour in the crowded train of Shanghai, back to work…:( This morning when the alarm rang I felt like someone was waking me up in the middle of the night…I could have kept sleeping forever. Isn’t that weird? I mean it’s Monday, supposedly I had 2 days to rest and recharge my battery…how is that on Monday I feel more tired than on Friday? Like on Friday I just jump off the bed in the morning ready and energetic for the weekend to start!…….I really don’t get it….
Anyways, to sweeten a bit this bitter and rainy Monday, I’ll post the recipe for making cupcakes. I’ve made them on Saturday morning and now at home I only have 1/2 left @_@………I am start worrying about whether I will fit in my bikini this Summer……..
Let’s take these bad thoughts off my head and let’s focus on cupcakes: cupcakes are small cakes designed to serve one person. they are generally backed in aluminum cups and decorated with frosting or sprinkles.
I personally like them a lot. they come in a wide variety of flavors: chocolates, vanilla, coffee, fruits, ext. They are not really common here in Shanghai so I have decided to make them myself.
Making cupcakes is actually pretty easy and fast, even making the frosting is not difficult at all, but if you get lazy you can just buy it at Carrefour or Cityshop. They generally sell the vanilla and chocolate flavors for about 30 yuan.
Ingredient (for 6 cupcakes): 配料（约6杯形蛋糕)
- 1/4 cup cocoa powder (25 g) – 25 克巧克力可可粉
- 1/2 cup sugar (100g) – 100克白糖
- 1/2 and 1/4 cup flour (90 g) – 90克面粉
- 1 egg – 1个鸡蛋
- 1/4 cup butter (65g) – 65克黄油
- 1 tsp vanilla extract – 1 茶匙吨香草
- 1/2 cup boiling water – 1/2 杯开水
- 1 tsp baking powder – 1茶匙发酵粉
For the frosting: 巧克力结霜
- 60 g dark chocolate – 60克黑巧克力
- 1/3 cup butter (75 g) – 75克黄油
- 80 g powdered sugar – 80克糖（搽粉）
- 1 tsp vanilla extract – 1茶匙吨香草
Preheat oven at 190 C (375 F). Lightly butter 6 muffin cups. Stir until smooth hot water and the cocoa powder. Let cool to room temperature. 预先加热烤箱对375华氏度(190摄氏度)和轻地黄油6个松饼杯子混乱煮沸的热水和可可粉。 让冷静对室温.

In the meantime prepare the frosting by melting the chocolate, then beat butter, sugar and vanilla until smooth and fluffy. Now add the melted chocolate to the mixture and stir to combine.
