Coconut Carrot Muffin

If you like muffins this is definitely an healthy choice.  These muffins have lots of fibers and vitamins and they are so colorful! My friend Debbie loved them and ate them all :)

Ingredients (for 6 muffins): 原料(6个松饼)

  • 1 cup flour (125 个)- 125 克面粉
  • 1 cup carrots – 1 杯胡萝卜
  • 1/2 cup coconut flakes – 1/2 杯椰子片
  • 1/4 cup butter (57 g) – 57克黄油
  • 2 eggs –  2个鸡蛋
  • 1/4 cup sugar (50 g) – 50克白糖
  • 3 tbsp milk –  3汤匙牛奶
  • 2 tsp baking powder – 发酵粉

Preheat oven at 190 C (375 F). Lightly butter 6 muffin cups. 预先加热烤箱对375华氏度(190摄氏度)和轻地黄油6个松饼杯子

In a bowl mix eggs, melted butter and milk, in anther bowl mix flour, sugar and baking powder. 在另外一碗把鸡蛋, 酥油和牛奶混合一起。 在另外一碗把面粉,糖和发酵粉

Now pour the wet ingredients into the the flour and mix it up. 把鸡蛋混合物倒入面粉碗里。

  1. These muffins look great, as do a lot of your recipes. I’ll have to give this one a try.

    Also, I like the fact that you included non-metric measurements and temperatures for those of us who need it.
