Summer Rice Salad

This is one of my favorite Summer salad. When I lived in Italy in the Summer my mom used to make it very often and it was THE MOST delicious food to eat when we got back from the beach, hungry and thirsty. I remember I use to eat it out of the serving bowl, standing in front of the fridge…it was awesome!

You should try, it’s an experience! A lovely, unforgettable one…

Ingredients (for 6 servings)

  • 1 1/2 cup white rice
  • 250 g cherry tomatoes
  • 1 can mixed vegetable
  • 1 can (180 g) tuna in oil
  • Basil
  • a few black olive
  • 50 g mozzarella cheese
  • 1/4 cup olive oil
  • salt

Cook the rice and let it cool down

Dress it with some olive oil (about half of the total quantity).

In a separate plate cut the cherry tomatoes and dress them with salt, 1 or 2 tbsp olive oil and chopped basil.

Take one can of mixed vegetables

Dump it in the bowl with the rice together with one can of tuna.

Chop a few black olive oil add them to the rice. Add in the tomatoes

Cut the mozzarella cheese and mix it together with all the other ingredients. Add the remaining oil and chopped fresh basil.

Refrigerate for at least 1 hour then serve.

You can also add hard boiled eggs and/ or some smoked ham cut into cubes and a few tbsp of mayonnaise if you want your salad to be a little bit more rich!
