Milk Panini!

When I was a little kid my mom used to always prepare this milk, round, small panini and fill them up with prosciutto and cheese. I used to bring them to school as my snack or offer them as finger food to my classmates when I had some little party at my place.

I love these panini! They remind me about my childhood!
What makes them even more lovely is the fact that you can stuff them with whatever you like better, sweet or salty! Nutella, ham, prosciutto, tomatoes and mozzarella….anything that will make you skirt fly up!

Try this, try this, try this!

Ingredients (makes 15 servings):
1 -1/4 cup flour
1 tsp salt
20 g sugar
100 ml milk
1 tbsp butter
2 tbsp instant yeast
1 tbsp canola oil
milk to coat

Melt yeast into about 30 ml of warm milk

Set aside until it looks all freaky and bubbly

In a separate bowl place the remaining milk, butter and sugar and microwave it for 30 sec or until butter starts to melt. DO NOT BOIL!

In a bowl of your electric mixer place flour and salt

With your mixer on low speed, pour in the milk/yeast mixture

and then the butter/milk/sugar one

keep mixing for a few minutes until you get a soft and smooth though. Knead the dough by hands on a working surface too for about 5 min

Coat a bowl with canola oil, place in the dough cover with plastic wrap and a towel and let it rest for at least 2 hours

2 hours later the dough should be doubled in size, like this

Now, grab the dough and divide it into small balls, about 30 g each

Place each ball on a baking tray, cover with plastic wrap and let rest for another good solid hours….

go pole dancing in the meantime…or do your laundry…up to you…

Now, 1 hour later your panini will look nice and puffy

Coat them with some milk

Then bake’ em at 220 C for about 15-20 min or until golden brown

Remove from over and let cool

And now give free space to your imagination…
since I’ve gotten much of it tho, I just grab one milk panino

cut it in a half

and stuffed it with a slice of ham

and one of scamorza cheese

Close you panini

and seal it with a tooth stick

enjoy or serve to your party!
