My mom is feeling better and better everyday, which makes me happy!
Yesterday we even cooked together. We made this Southern Italian traditional dish that both my mom and I learned from my grandma.
This is a very simple and cheap dish, like most of the Southern Italian dish, made of beans, vegetables and olive oil.
This is how you make it!
Ingredients (serves 8):
- 1 kg of Endive (boiled)
- 1/2 kg of beans
- 3 tbsp olive oil
- 1 medium size potato
- 1 tsp salt
- 3 tbsp flour
- 1 tsp of olive oil per serving
Soak the beans in water overnight
This is the following day
Rinse them with fresh water
Then drain them
and put them in a high pot
Add in 1 chopped potato
cover with water
and bring it to a boil on medium heat. As soon as the water starts boiling an heavy foam will create on the surface
Remove it with a spoon
Add 1 tsp of salt and let simmer for about 30 min, or until the beans will look like this
At this point drop in about 3 tbsp of flour and stir well
Keep cooking on low heat for 5 more minutes then turn off the heat
Drop 3 tbsp of olive oil in an other pot and heat it up
place a masher on top of the pot with oil
and slowly move the beans from one pot
to the other and mashed them
Keep cooking on low heat stirring constantly. Then turn off the heat!
Meanwhile boil some vegetables, I like endive, I think it match really good the bean puree
Serve in a plate some of the veggies
then laddle on top one or two spoons of puree
Drizzle with about 1 tsp of olive oil and enjoy!
