I Taralli!

Monday…and I’m at work…well, today is the Monday after Easter and in Italy everyone is on holiday picnicking with their friends.

I remember my friends and I always used to go somewhere close to the beach and picnic there, each of us brought something to eat and share with the others. One thing that could never be missed were our most favorite Taralli! Me and my cousin could go through an entire bag in a few hours…

Yesterday I made some for myself, as they are impossible to find here in China!

Taralli are a typical Southern Italian crunchy small, round bread shaped like a ring. They are simply made with flour, olive oil and wine flavored with several ingredients like fennel seeds, rosemary, chilly peppers.

I’ve made the rosemary one, but you can replace it if you like.

Here is the recipe!

Ingredients (about 30 pieces):

  • 2 cups bread flour
  • 3 tbsp extra virgin olive oil
  • 80 ml white wine (or more if necessary)
  • 1 tsp salt
  • 1 tbsp dry rosemary

In a bowl place flour, then add 1 tsp of salt

pour in the olive oil

then the white wine. Start with 50 ml and work your way up!

Next up, grab some rosemary and add it in

Knead the dough until it gets smooth a slightly harder then bread dough.

Then cover it with plastic wrap and let it rest in a cool place for about 20 min.

Now shape the dough into 8 cm long ropes thick as your pinky finger

and close the rope into a ring

Proceed until you have used all the dough

Bring some water to a boil and add in the taralli, a few (about 8) at a time

as soon as they come up to the surface

remove them from the saucepan and place them on a dishcloth to dry

Heat up the oven at 200 c and bake your taralli for about 30 min, or until golden brown and crispy

Let them cool down

then enjoy one!

I love eating taralli as a snack with some cheese and a good glass of wine!

One serving (3 taralli) provides:

  • Calories: 135
  • Fat: 4.5 g
  • Carbohydrates: 18 g
  • Protein: 2.7 g

    fatti ieri sera e sono venuti davvero buoni. mi ci e’ voluto un po’ a prendere la mano, perche’ all’ inizio l’impasto si sbriciolava troppo, e poi quando ho cominciato a formare i taralli ho dovuto spesso bagnarmi le dita con il vino per mantenere la pasta unita…comunque…sono proprio buoni! le mie molecole pugliesi sono in festa da ieri sera…a proposito vivo in orange county, california.
