Talking of food, you guys know I just can’t get myself to stop eating sweets. It’s like my number one addition…Every night after dinner I need to treat myself with either a cookie, a piece of pie, a slice of cake, a portion of chocolate mousse or a muffin!
The muffins I made last week are going to knock your socks off! They are soft and moisture, got a bit of crunchiness from the walnuts I have incorporated in the batter and extra sweetness from the sugar sprinkled on top…
Let me show you how to make them!
Ingredients (makes 16 muffins):
- 2 cups flour
- 1/2 cup cocoa powder
- 1 cup sugar
- 2 tsp baking powder
- 1-1/4 cup milk
- 1 whole egg
- 2 tbsp vegetable oil
- 1 tsp vanilla
- 1 cup semi sweet chocolate chips
- 3/4 cup chopped walnuts
- 3 tbsp granulated white sugar
- 32 half walnuts
Put flour and baking powder in a bowl and sift in the cocoa powder
Add in 1 cup of granulated sugar
in a separate bowl combine the egg, vegetable oil and vanilla extract (note: I’ve used 2 eggs ’cause the one I had home were insanely small…if you can get your hands on a standard size egg, just use one)
Beat to combine then pour in the milk
then pour the liquids into the bowl with flour and cocoa. Whisk all the ingredients together
chop up about 3/4 cup of walnuts
and get 1 cup of semi sweet chocolate chips
and add both to the batter. Mix to combine
Scoop about 2 tbsp of batter into muffin cups
Place one half walnut on top of each muffin
then sprinkle with granulated white sugar
Bake at 180 for about 20 min. Remove from the oven and let them cool down
These muffins are moisture and soft
