Two more weeks to go until Christmas!
no wait…less than 2…:D
I just LOVE this time of the year. Last Saturday I decorated my house: bought a small tree and adorned it with colorful lights and balls, hung mini Santas around the house and lighten red candles. While I was decorating the house, for a spit second I thought about my ex and about how we used to decorate the house together every year…that thought got me sad but then I thought about the many exciting new things that are happening in my life right now and I reminded myself that I should not let ANYTHING and ANYONE get me sad, so I put a smile on my face and head to the kitchen to bake some cookies!
Christmas time = cookies in my head…I don’t know in yours…but…
For the cookie dough I used my shortbread cookies recipe, for the icing, instead I’ve used this new recipe which is perfect if you wanna, like me, cut off a few calories or not having to worry about using raw eggs. This icing in fact uses JUST water and powdered sugar
for the shortbread cookies
- 1 cup all purpose flour
- 1/2 cup butter
- 1 tsp orange flavoring
- 1/4 cup sugar
for the icing
- 2 cups powdered sugar
- 5-6 tbsp warm water
- food coloring
Start by making the cookies. In a bowl of your electric mixer beat the butter until it’s nice and creamy
add 1/4 cup sugar and keep mixing on medium speed
add in the orange flavoring
and the flour, scraping down the sides of the bowl from time to time while mixing
You will get a very soft dough. Refrigerate for about 20 min
Then roll it out and using cookie cutters cut out your cookies in the shape you like better.
Bake your cookies at 180 C for about 10 min then let them cool on a wire rack!
Meanwhile prepare the frosting…
In a bowl place 1 cup powdered sugar
Slowly add in a few tablespoon of boiling water until you get the right consistency
Next up add a few drop of food coloring…I used red
then repeat with the other cup of powder sugar using a different color. You can keep going like this with as many color you want
Then place the icing into bottles
and start decorating the cookies. Now please excuse my pathetic, childish decorations but drawing and arts have never been my thing…
First design the border
then squeeze icing of different color right in the center and using a tooth stick spread it across the cookie
This is what I got in the end
I’ll tell you one thing: no matter how “non pretty’ my cookies are, I had a lot of fun decorating them. This is a great activity to do with your kids during the Christmas holiday! I don’t have children yet but I’ll definitely have them decorate cookies with me the day they’ll come…ok that might take some time….but still…I’m just saying 😉
