In Italy in 2 sleeps! Countdown to the Christmas holiday, parties, dinners, presents, family and friends…I’m excited!
I’ve spent the last 2 days with the RhythmFit crew performing their amazing workout routine at the TeraWelness City Club in Shanghai. About 200 people came to watch and participate to the show, it was a total success. I’ll post a few pictures as soon as they’ll be ready!
For today let’s enjoy this tasty maple bacon corn muffins! Here is the recipe
Ingredients (makes 12 muffins):
- 200 g bacon
- 1 cup corn flour
- 1 cup all purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 1 cup milk
- 2 whole eggs
- 1/4 cup melted butter
- 1/4 cup maple syrup
- 2 tbsp butter + 1 tbsp maple syrup
Start by chopping the bacon
then heat up a skillet and cook the bacon until nice and crispy, set aside
In a large bowl combine all dry ingredients
in a separate bowl beat up 2 whole eggs and pour in the milk
the maple syrup
and the melted butter
Incorporate the wet ingredients to the dry one and mix them all together
add the bacon and stir well
Place muffin liners into 12 muffin cups and divide the butter into the liners
Bake for about 12 minutes at 180 C (375 F)
While the muffins are cooking, in a bowl melt 2 tbsp of butter then add about 1 tbsp of maple syrup
remove the muffins from the oven and while they are still hot brush their surface with the butter-maple mixture
Let them cool down then serve
