This is one of the things I cooked yesterday.
It’s my sicilian aunte recipe for stuffed eggs. I think it is the best EVER! I just love it, plus it’s very easy and uses, as always on EC, very simple ingredients.
Here is how you make it
Ingredients (serves 16):
- 8 whole eggs
- 140 g canned tuna
- 1/2 cup mayonnaise
- 2 tbsp chopped fresh parsley
- 2 fillets of anchovies
- 16 capers
- 2 egg yolks
First thing first, hard boil the eggs
then peel them
cut them in a half and remove the yolks. Save 2 full yolks for the filling
In a bowl combine tuna
with chopped fresh parsley, 2 egg yolks, anchovy fillets and mayonnaise
Mix all the ingredients together
then fill up each egg white cup
Decorate with one caper
Refrigerate until ready to serve!
This makes a great starter or finger food for parties.
