Let’s cook this tenderloin now
Ingredients (serves 2)
- 1 whole pork tenderloin
- 1/2 cup preserves
- 1/2 cup water
- 1 tsp white vinegar
- salt and pepper
- about 5 tbsp Italian herb mix
Preheat oven to 200 C (420 F). Grab your tender pork tenderloin
and season it with salt
then with lots of Italian herb mix
press gently to get the herbs to adhere to the pork
Roast it in the oven for about 15- 20 min. Then take it out and let it rest for a min
In the meantime grab your preserves. I’ve used this delicious stuff my friend Mike brought me back from the States a while ago
When I opened the jar a fabulous smell came out filling my whole kitchen. This preserves is made with Mango, Pure Cane Sugar, Onion, Red Bell Pepper, Apple, Red wine vinegar, Raisins, Brown sugar, Candied Ginger, White vinagar, Canola Oil, Lime Juice, Curry Powder, Salt, Ground Ginger and Cayenne Pepper…
In a small pan combine preserves
water and vinegar
and bring to a simmer
until it reduces
Slice the pork into thick pieces
move it on a plate and spoon the sauce over the slices
READY TO SERVE!
This was absolutely one of the best meat dish I have made and ate in a long time!
