I had so much food in my fridge from all the cookbook cooking and other culinary experiments (rocket pesto, ricotta, meatloaf,…) that needed to be consume as fast as possible so I decided to throw it all in a sandwich!
It was a great idea cause this sandwich rocked my world! and it will rock yours when you’ll try it!
For the bread I have used the loaf I made for my cookbook, it’s a Mediterranean recipe of mine with sun-dried tomatoes, capers and olives but, while waiting for my book to be published, you can replace it with simple white bread or whole wheat one.
- 3 slices of bread of your choice
- 1-2 slices of meatloaf
- 2 slices of tomatoes
- 1 tsp rocket pesto
- 1 tbsp ricotta
Grill the bread on both sides
then spread the rocket pesto on one slice
lay a few sliced of meatloaf
next up grab the second slice of bread and spread the ricotta cheese on it
put it on top of the sandwitch and add a few slices of tomatoes
and some lattuce
Cover with the remaining slice of bread, pressing well down
Your sandwich is ready to be served!
