I made this ice cream dessert in Italy and I completely forgot to post it here. So before sharing with you more healthy recipes (since Im on a diet…), today it’s time for some fatty/tasty/awesome Italian ice cream cake!
To whip this up you will need very simple ingredients, also it is VERY easy to make 🙂

- 250 g vanilla ice cream
- 250 g chocolate ice cream
- 50 g dark chocolate
- 80 g digestive cookies
- 1/4 cup unsalted butter
- chopped nuts (optional…and if you have them in your pantry. I did not!)
Start by taking the vanilla and chocolate ice cream out of the freezer and let them stand on the counter until they soften up.
Meanwhile put the digestive cookies in a food processor
and crumble them. Melt the butter then pour it into the cookies, stirring well.
Press the mixture on the buttom of a plumcake pan that you will have previously covered in plastic wrap. Put in the freezer for 20 min.
NOTE: save about 2 tbsp of the cookie crumble, we will use it later)
Next up take the vanilla ice cream and with a spoon cream it up
Then spread it onto the cookie crust. Put in the freezer for about 1 h.
When the vanilla ice cream is pretty solid, go on and put the dark chocolate into a bowl
and melt it into your microwave,
then spread it evenly onto the vanilla ice cream. Put in the freezer for about 10 min
Next up, soften up the chocolate ice cream
and spread it on top of the dark chocolate, that by now should be pretty hard. Sprinkle the top with the 2 tbsp of cookie crumble and put in the freezer for at least 2 hours
This is the following day!
This makes a perfect dessert to have ready in your freezer 🙂
