The perfect last minute meal idea!
This pasta is delish, easy and quick to make, which means is perfect for me since recently my life has been HECTIC!
I’ve had so many things to do at the office and outside that I just wanna cry! Let me cry please!
Tho most people keep telling me that “busy is good”, and I do know myself that all the things that are happening in my life right now are wonderful, I’m still very much looking forward to get some vacation time over the Christmas holidays!

Now let’s talk food and let’s make this pasta, shall we?
Ingredients (serves 2):
- 1/4 cup (packed) sun-dried tomatoes
- 1/4 cup roasted walnuts
- 1/4 cup extra virgin olive oil
- 1 clove garlic
- 1/4 cup grated Parmesan cheese
- 5-6 leaves fresh basil (plus more to decorate)
- 1 tsp lemon juice
- black pepper
- 180 g spaghetti
- 1/4 cup reserved pasta water
Boil pasta according to package instruction, Drain it and save about 1/4 cup of cooking water
In a food processor put sun-dried tomatoes, roasted walnuts, Parmesan cheese, garlic, lemon juice, basil and black pepper
Process it until smooth adding the reserved pasta water as needed
Dress the spaghetti with the pesto
transfer to a plate and decorate with extra basil leaves. Sprinkle more Parmesan cheese if needed
Serve and enjoy!
