A few weeks ago I got invited to the opening of Prime Fitness, a new and completely alternative gym in Shanghai.
The whole concept of Prime is based on primal training and paliolitic diet! You guys know that beside food, my biggest passion is sport. I exercise regularly and try, as much I as I can, to eat healthy food and stay fit. When I first met Victor Rowse, one of the founder of Prime Fitness, and heard about his project I got excited and curious! I did some research on primal eating and decided to give it a try.
I don’t think I’m going to strictly stick to the paleo diet, but I’m definitely going to follow some of its main guidelines.
Yesterday I decided to try some paleo-friendly food and came up with this simple recipe, a palio-fried rice with no rice, but cauliflower. It was very tasty and filling!
I’ve also booked my first primal training session with Victor for this Thursday! Soooo looking forward to get some high intensity workout!
Ingredients (serves 1):
- 300 g cauliflower
- 1 egg
- 1 egg white
- 1 tsp coconut oil
- 200 g white mushrooms
- 1/4 cup chopped tomato
- 2 tbsp chopped onion
- 1 tbsp chopped mint and basil
- a splash of low sodium soy sauce
- salt and pepper
Wash the cauliflower and place it into your food processor
and pulse it until pieces are the size of rice
Wash and slice up the mushrooms,
chop up onion
and tomatoes
Beat up the egg and egg white with a pitch of salt and cook them in an omelet. Remove and slide it up
In the same skillet heat up the coconut oil, add the onion and cook until soft. Add the mushrooms and stir around until browned
Next up, add the minced cauliflower, a splash of soy sauce and S&P.
Cover with a lid and cook for about 5 min. Remove skillet from fire and add the tomatoes. Stir around.
Chop up some fresh mint and basil and add it to the pot together with the eggs. Stir all the ingredient together and serve immediately.
You can decorate with more chopped herbs
