HEALTHY, HEALTHY, HEALTHY and SUPER TASTY! That’s what I always seek into a recipe!
This cookies are going to rock your boat pleople. They only call for 6 ingredients, are flourless so perfect if you’r intollerant, only downside is that the dough needs to be refrigerated for at least 1 hour in order to get very chewy cookies, so make sure you’ve got enough time. You can also prepare it te day before and refrigerate it overnight.
The orignal recipe (from Crunchy, Creamy, Sweet) called for 1 cup of sugar, I brought that down to 1/3 cup but that realy depends on how sweet you like your cookies to be.
Ingredients (makes 12-15 big cookies):
- 1 cup creamy peanut butter
- 1/3 cup dark brown sugar
- 1 large egg
- 1/2 cup mini chocolate chips
- 3 tbsp unsweeten cocoa powder
- 1 tsp baking soda
In a bowl of your electric mixer combine all the ingredients, except for the chocolate chips, and mix until all the ingredients are combined.
Wrap up dough into plastic paper and refrigerate for at least 1 hour (or overnight). Then when ready to bake preheat oven to 180 C (375 F)
and scoop dough out onto perchement paper
Flatten out each ball with a glass and place a few chocolate chops onto each cookie
Bake for about 10 min, let cool on sheet for 30 second then on cool rack
Enjoy with your valentine or over a hot cup of milk
