Anyway, let’s get some energy from these delicious and healthy muffins. I made them a while ago but did not have time to share them with you until just today. Apologies
Ingredients (makes 12 muffins):
- 1-1/2 cup flour
- 1/4 cup oat bran
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/3 cup honey
- 6 tbsp sugar
- 1/3 cup whole milk
- 1 cup pumpkin pure
- 1 egg
- 2 tbsp canola oil
- 1 cup chopped walnuts
In a bowl combine honey, milk, canola oil, sugar, egg and milk
Then add flour
Whisk all the ingredients together until well combined then divide the butter into 12 muffin cup (that you will have lined with muffin papers)
Bake at 180 C for about 20 cm or until completely cooked.
Remove from the oven and let them cool down on a wire rack
