Apple Cake with Amarena Fabbri

I think last time I made an apple cake was when I was in high school and on my German textbook there was this recipe with a beautiful picture and I couldn’t resist…I remember the result I got back then was not a great one…but I blame my poor German and my very poor ability to properly translate the recipe……

Then I the other day I suddenly remembered of the existence of apple cakes…and since I had this jar of  black cherries in syrup (Amarena Fabbri) that I desperately wanted to try, I decided to give apple cake a second shot…This time I did not rely on any recipe but I just follow my instinct and made up my own.

I can only tell you my mom whipped up the whole cake in less than 24 hours…

Here is the recipe if you people feel like trying!

Ingredients:

  • 1 cup all purpose flour
  • 1-1/2 tsp baking powder
  • 1 stick butter
  • 1/2 cup greek yogurt and heavy cream (2 tbsp of heavy cream)
  • 2 eggs
  • 1/2 lemon, juice
  • 3/4 cup + 2 tbsp of sugar
  • 1 granny smith apple
  • 1 cup Fabbri Amarena ( black cherries in syrup)
  • 1/2 tsp salt
  • 2 tbsp powdered sugar

In a bowl of your electric mixer cream butter and 3/4 cup sugar. Stir in eggs one at a time, mixing well after each addition

Pour in the mix of heavy cream and Greek yogurt and mix well

Combine flour, salt and baking powder and slowly add the mixture to the batter mixing well until you get a nice smooth texture

Open your jar of Fabbri ‘amarena’ (black cherries in syrup)

and add about 1 cup to the batter. Stir gently

In a separate bowl combine the remaining 2 tbsp. of sugar, cinnamon and lemon juice

Peel and slice up the apple very thin and coat the slices into the juice mixture

Heavily butter a baking dish and pour in the batter. Spread it evenly

Arrange the apple slices on top of the batter in overlapping rows, pressing slightly into the batter

Just like that

Bake at 180 C for about 45 min. Remove from the oven and let the cake cool down completely

Sprinkle the surface with powdered sugar and serve
