There is nothing better in the morning than a cup of strong espresso or cappuccino with a slice of bread with jam and butter.
For me breakfast is the most enjoyable meal of the day. I can skip lunch or dinner if I’m too busy but I could never give up on a nice and relaxed morning meal. No matter how in a rush I can be, I always take a solid 15 min to seat down and enjoy my breakfast.
This sweet bread is what I have had for the week before leaving for my vacation in Italy. It’s nutritious, healthy and incredibly tasty.
Here is how you make it!
Ingredients (make one loaf, about 15 slices):
- 2 whole eggs
- 3/4 cup white sugar
- 1/2 cup unsalted butter, softened
- 1 tsp. vanilla beans
- 1 lemon, zest
- 1/2 cup buttermilk
- 2/4 cup whole wheat flour
- 2 tsp. baking powder
- 1/2 cup cottage cheese
- 2/3 cup Amarena Fabbri (chopped)
- 1/2 cup banana
- 2 tbsp. powdered sugar
In a bowl of your electric mixer beat up eggs and sugar until light in color
Add in the softened butter, cottage cheese, vanilla bean paste, zest of a whole lemon and buttermilk. Mix all ingredients together
Now grab a very ripe banana and with a fork mash it into a pure’.
Add the banana, flour and baking powder to the batter. Mix until all ingredients are combined.
Next up measure about 2/3 cup of Amarena Fabbri
chop them up and add them to the batter. Heavily grease a bread loaf pan and pour in the mixture
Bake a 180 C for about 1 h or until a tooth stick comes out clean. Let the bread cool down completely on a wire rack
then sprinkle the top with powdered sugar, slice it up and enjoy!
