Baked Meatloaf with Bell Peppers

MEAT! I’ve been neglecting you recently. But now I am back and I will never leave you again!

I don’t know why but since I live by myself I don’t feel the need to eat meat very often, which is weird cause I LOVE meat! I am not a vegetarian and, most likely, I will never be one. I think the reason is that it is so hard here in China to find decent meat without breaking the bank. All the imported stuff is quite pricy and the local one is not, by any mean, anything close to meat. It’s plain hard chew gum….

Ground meat is the easiest and safest of all. I had some in my freezer and decided to whip it off into a meatloaf stuffed with bell peppers.

Here is the recipe!

Ingredients (serves 3):

  • 300 gr ground beef
  • 200 gr ground pork
  • 1+1 tbsp chopped parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 100 g white bread
  • 1 whole egg
  • 4  bell peppers
  • 2 tbsp olive oil
  • 1 tbsp capers
  • 1 clove garlic

Wash the bell peppers and place them on your oven tray and bake them at 250 C until grilled all around

then place them into a ziplock bag and let them cool down. When cooled, peeled them and removed the internal seeds. Cut them into strip.
In a skillet heat up the oil and saute’ the garlic. Add the bell peppers, salt and cool on medium for about 5-6 minute. Add the capers, 1 tbsp chopped parsley and cook for 5 more minute.

Soak the bread in water, then peel the crust off and squeeze out the water.In a bowl combine grounded pork and beef, 1 tbsp chopped parsley, salt, pepper, egg and bread. Stir all the ingredients together

Spread the meat mixture into a rectangular shape onto baking paper then spread 2-3 tbsp of the bell peppers on top leaving about 2 cm on one edge.

Roll up the meat into a loaf, sealing it well on both sides.

Bake the meatloaf for about 60 min at 190 C. When cooked, remove it from the oven

and place it into the pan with the belle pepper. Keep cooking on low heat for about 10 minutes.

When ready slice it up and serve it with a few more tbsp of bell peppers.
