Lemon Juice Chia Seed Dressing
Recently I have been obsessed with chia seeds. They are just SO healthy and good for you. They are an awesome source of fibers, protein and omega-3 fats.
I love to fill up a 500 ml bottle with fresh water, a squeeze of lemon juice and 1 tbsp of chia seeds, place it in my fridge overnight and drink the whole bottle at the office the next day. This type of water is also super good to use in your morning smoothie to add extra richness and creaminess.
The other weekend I also made this salad dressing with extra virgin olive oil, fresh lemon juice, Himalaya salt and chia goodness. It’s creamy and thick, perfect to drizzle over your salads or also fish and meat.
Here is how to make it!
Ingredients (make 60 ml):
- 1/3 cup extra virgin olive oil
- juice of 1/2 lemon
- 1/4 tsp Himalaya salt
- 1 tbsp chia seeds
- 1/2 cup water
Squeeze the juice of half lemon
In a jar place the lemon juice, olive oil, salt and chia seeds.
Cover with a lid and place in your fridge overnight.
Here how it will look the following day. The chia seeds will have absorbed most of the liquid.
Place all that + 1/2 cup of water into a blender and process until creamy
Transfer to a container and store into your fridge up to 1 week!
