Avocado, Beet, Orange Salad with Shrimps and Goat Cheese

This hearty fall salad is full of flavor. It’s colorful, healthy, fresh. It makes the perfect starter or side idea for the holiday gatherings as a more balanced and healthier option.

I made this a few days ago as my lunch and I couldn’t want more of it!

Ingredients

  • 1 small beet, roasted
  • 1/4 cup extra-virgin olive oil
  • Coarse salt and freshly ground pepper
  • 2 teaspoons balsamic vinegar
  • 2 tablespoons orange juice
  • 1 avocados, sliced
  • 1 navel oranges, peel and pith removed, segmented
  • 2 cup arugula
  • 1/2 cup cubed goat cheese
  • 12 jumbo shrimps, peeled and unveiled
  • lemon, juice of 1/2

Preheat oven to 200 C. Wrap beets tightly in foil and roast until tender, about 1 hour. Once cool, remove skin and slice.

Segment the orange

Wash the shrimps

In a skillet heat up 1 tbsp of extra virgin olive oil, add the shrimps, season with salt and pepper and cook on medium for 3-5 min. Squeeze in the juice of half lemon and keep cooking for 2-3 min. Remove from heat and set aside

Lay beets, oranges, avocado, arugula on a plate.

Add crumbled goat cheese and shrimps.

Dress with salt, pepper, extra virgin olive oil and the orange juice.

Serve it up!
