Pineapple Asian Spiced Pork Ribs

Every year during CNY holiday my friends I gather together for a home cooked meal all together. Each of us brings an “Asian inspired dish”, could be anything.

This year i decided to order a rack of pork ribs rub it in asian spiced and pineapple sauce. The contrast between the sweetness of the pineapple and pungency of the spices made these ribs SUPER.

I cooked them for 2 hours in the oven, just until meat was about to fall off the bone.

I got my rack of baby ribs from Mr.Meat, it’s a piece of 750 gr from Spain. To give the meat extra flavor, marinate it in its dry rub overnight. If you haven’t gotten this much time, then just a few hours will do.

Ingredients:

for the dry rub

  • ¼ cup brown sugar
  • 2 tbsp sesame seeds (black and white)
  • 1 tbsp kosher salt
  • 2 cloves of garlic
  • 1 tbsp Chinese Five Spice Powder
  • 1 tbsp ground pepper

for the pineapple sauce

  • pinch red pepper flakes
  • 1 cup diced pineapple
  • 1 tbsp fresh ginger
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • 1 tsp sugar
  • ½ tsp kosher salt
  • ½ tbsp Chinese Five Spice Powder

Get your hands on a rack of pork baby ribs (or riblets)

In a bowl combine all ingredients for the dry rub

stir until all mixed up

lay the rack of ribs on a large piece of aluminium foil and rub liberally on both sides of the rack of pork ribs bottom

and top

fold up and allow to marinate for at least 2 hours or overnight for maximum flavor penetration

Preheat oven to 180 C, bake the rack in its foil for 45 min. Meanwhile prepare the pineapple sauce. Place all ingredients in a blender

and process until creamy

Take the rack of ribs out of the oven, unfold it from the foil

and brush it with the pineapple sauce

Cover again in foil and bake for 45 more minutes. Take the rack out of the oven again, uncover it

And bake at 200 C for 10-12 min or until it gets a golden-brown color

Cut in between bones and serve it up with your selected side dish!
