Eggplant Rolls

Eggplant makes me think of the Summer, warm weather, the beach and the sun…don’t ask me why, these are random connections I do in my mind…anyways, the temperature has started getting warmer and it finally feels like we can say goodbye to the Winter, put our coats and sweaters in the closet and finally enjoy a bit of sunshine.

All this made me want to prepare this eggplant dish 🙂 All you need is bechamel sauce (that you can buy or make yourself), fresh tomatoes, and smoked scamorza cheese (which is a kind of soft cheese). You can order it at Bottega, as always for Italian cheese at cheap prices 😉

Ingredients (for about 6 servings): 配料(约6人份量):

  • 2 eggplants -2个茄子
  • 1/4 cup Parmesan Cheese -20 克磨碎帕尔马干酪
  • 1/2 Scamorza cheese (100 g) –  半Scamorza酪
  • 1 tomato – 1个番茄
  • 200 ml Bechamel Sauce – 200升白酱

Wash and cut the eggplants into slices 首先把茄子洗干净切片

Grill the eggplants 把茄子烤熟

On each slide place one slide of tomato and one of scamorza cheese. 在每一个茄子片上放一片番茄和一片scamorza酪。

Roll it up 将茄子卷起。

Place each roll in the oven tray. 把每一个卷放在烤盤中

Cover the rolls with bechamel sauce and parmesan cheese. 把帕尔马干酪和白 酱洒最上面

Bake in preheat oven at 180 C for about 30 min. 放入预热的烤箱以约180度烤30分钟

Let sit for 5 min.  静置松驰约5分钟

One serving (2 rolls) provides:

  • Calories:  165 (from fat 81)
  • Fat: 9 g
  • Carbohydrates: 14 g
  • Protein: 8.6 g

  1. Dani, the rolls are excellent.
    Being in China doesn’t have to mean your kitchen cannot smell delicious while cooking and that in the process you can have lots of fun. Was a dinner for two. I poured an Italian aperitivo (Spritz) and started cutting the eggplant. Always tricky to get them straight-cut. I didn’t pregrill them. I simply forgot to! I used cooked ham, a gouda-like cheese and a fifth of a tomato for each roll. At some point I discovered in horror not to have toothpicks so I was provided with string. Simple string. Be careful to remove it when eating.

    The besciamella was insane, it was my first besciamella ever and I was given “best-for-bread” flour even though I had just bought a new all-purpose flour pack. It’s nice to use the stuff you buy.ahhaha! ok-la, I will do this dish again and again until I am satisfied. It was a success. Thanks Dani.
