I am happy!
Because it’s Wednesday and it’s my last day at work before a 8 day holiday in New Zealand, north island.
Because tomorrow a very close friend of mine from Italy will come visiting me in Shanghai and we will spend a wonderful 24 h together.
Because this morning when I woke up I could breath without feeling like someone was stubbing me with a knife.
Because this morning I made myself a real, tasty, delicious espresso coffee, with my new Castellari espresso machine,
and because yesterday I made Chocolate Chip Rolls which I ate with my coffee this morning…
and so, because I want you all to be happy, I am posting the recipe of my chocolate sweet rolls, which I have found on The pioneer woman website. She is my myth…I LOVE YOU PIONEER WOMAN!
for the rolls:
- 2-1/4 cup flour
- 1 package of instant yeast
- 1 cup milk
- 1/4 cup canola oil
- 1/4 cup sugar
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 stick butter (melted)
- 1/3 cup brown sugar
- 1 cup chocolate chips
for the frosting:
- 125 g cream cheese
- 1 cup powdered sugar (sifted)
- 1/2 stick of butter
- 1/2 cup milk
- 1 tsp vanilla extract
In a skillet heat oil, milk and sugar. You want it to get warm but not boiling. Then add the instant yeast and let it rest on the surface for a few minutes.
Now sift in 2 cups of flour and mix well. You should get a very sticky dough.
Cover with a lid and let rest for at least 1 hour.
At this point the dough should have doubled in size…That’s good!
Add the remaining 1/4 cup flour with 1 tsp of salt, 1 tsp of baking powder and 1 tsp of baking soda. Mix well.
Transfer the dough on a slightly floured surface and kneat it for a few minute.
Roll the dough out into a rectangular shape
and pour in the melted butter. Spread it evenly.
Sprinkle the sugar
and the chocolate chips
Now Starting from one edge, roll up the dough.
Seal it well
Next, cut it into a 1.5 cm thick rolls
Place your rolls into a slightly greased pan.
Cover with a towel and let rest for about 30 min. This is after.
Now back the rolls at 180 C for about 30 min or until golden brown in color.
Meanwhile prepare the frosting!
Combine cream cheese, powdered sugar and butter and cream it.
Slowly add milk until you get a very pourable cream.
As soon as you take you rolls out of the oven pour the frosting on top.
Make sure they are all well covered.
