You are all going to love this! Yes you ARE! This is a delicious recipe for braised short ribs…it’s a bit time consuming but, trust me, totally worth it!
I made it last Saturday and my bf loved it. The meat gets sooo tender you won’t even need to chew it.
Ingredients (serves 4):
- 8-10 short ribs
- 6 slices of pancetta (or bacon)
- 1/4 cup flour
- salt, black pepper, herbs (theme, rosemary, oregano)
- 1/2 onion
- 2 whole carrots
- 2-3 tbsp olive oil
- 2 cups red wine
- 2 cups beef broth
Star by chopping onion and carrots
Take your beautiful short pork ribs
Salt and pepper you pork ribs
Dredge’ em in flour
Chop the pancetta (or bacon) into small pieces
Cook pancetta over medium heat until complete crispy and all fat is rendered
Remove pancetta, but keep the residual fat in the pan
Now add some olive oil, heat it up
on both sides, then remove from pan and set aside
In the same pot add in chopped onion and carrots
saute’ till soft
Then pour in the wine, cook for a couple of minutes
the add the beef broth, bring it to a boil
Add ribs to the liquid
they should be almost fully submerged
adjust with salt, add some black pepper, and a mix of herbs
then add the bacon
Cover with a lid and let cook for about 2 hours at low heat
and here we go…
just take a minute to look at them…yes you made it!
Serve with mashed potatoes!
