Who does not like Feta?
I LOVE feta cheese and particularly in the Summer it’s something is never missed in my fridge. I love feta and pasta, feta and chicken, feta and salad…oh boy is feta my favorite cheese!
The other day I’ve mixed feta with grilled zucchini, divine!
Ingredients (serves 12):
- 3 big zucchini
- 10 leaves of fresh mint
- 150 g feta cheese
- 1 tsp salt
- 2 tbsp extra virgin olive oil
Grab your zucchini, wash’ em, slice’ em up and grill’ em on a hot pan
When cooked remove from heat and let them cool
Next, grab each slice and first cut it horizzontally into long strips
and then into smaller pieces
Put them all in a plate, add salt
then grab some fresh mint (don’t use it all, leave a few leaves for decoration), chop it up and add it to the zucchini
pour some extra virgin olive oil
mix all the ingredients together then add in some crumbled feta cheese
Add some more mint on top to decorate and serve!
