You might wonder what happened to the Halloween recipes I promise I would share with you in my previous post…well, it happened that I got sick and couldn’t get myself to cook any more treats.

It’s getting cold here in Shanghai…this means only one thing: it’s SOUP time!
This sesame chicken noodle soup is going to rock your world! It’s one of the most delicious thing I’ve had in a long time.
and it’s easy, which is always a good thing.
I made this for myself yesterday, it was my dinner after I had to walk in the rain and cold for hours looking at apartments. Yes, I’m considering moving downtown to live closer to my friends but find good apartments at convenient prices is not easy in Shanghai.
Maybe I’ll just stay where I live now…I haven’t made up my mind yet…
One thing I’m sure about: I want this soup!
Ingredients (serves 2):
- 250 g chicken
- 1 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp maraschino wine
- 1 clove of garlic
- 1 1-2 tbsp tahini (sesame paste)
- 1 tsp sugar
- 1 tbsp fresh minced ginger
- 1 tsp rice vinegar
- 1 tbsp chili sauce
- 2 cups chopped Napa Cabbage
- 4 cups chicken broth
- 250 g soba noodles
- 2 tbsp chopped fresh cilantro
- 1 tsp salt
Cut the chicken crosswise into strips ( I used chicken legs, I find the meat to be a lot more tender than chicken breast)
Meanwhile in a separate bowl combine the tahini sauce, 1 pressed clove of garlic, ginger, vinegar, sugar and chili sauce
Stir to combine
Wash and cut the cabbage into strips
In a skillet heat up 1 tbsp of sesame oil,
add cabbage and sauté’ over medium heat for about 5 min or until tender.
Pour in about 4 cups of chicken broth and bring it to a boil.
Next up, add to the skillet the chicken with its marinade
and the tahini sauce
Reduce heat to low and cook until chicken is cooked and tender (about 10 min).
Meanwhile boil the soba noodles in salted water, drain them and put them in a bowl.
Add a few ladles of soups and sprinkle some chopped cilantro.
