It’s sunny and warm today in Shanghai. This morning I had a cooking class with 20 people, we learned how to make “spaghetti carbonara” and “chocolate chips cookies”.
On my way back home after class I felt like having something cool, sweet with fruit. When I got home I opened the fridge and saw a bowl of strawberries seated there calling my name! I grabbed it, put it in the freezer for an hour an then I threw the strawberries in a blender with lemon juice and honey and I made myself strawberry popsicles!
There are many way for making popsicles, this recipe is partuclarly healthy and lean, but you can also replace the lemon juice with the yogurt or mix the strawberries with some bananas. What is fun about making popsicles is that you can space things up the way you like the most.

Ingredients (makes 6 popsicles):
- 2 cups frozen strawberries
- 1/4 cup honey
- 2 tbsp lemon juice
Grab the frozen strawberries
throw them in a blender
add the lemon juice
and the honey
Turn on your blender and process until all the ingredients are creamy
Pour the cream into popsicle molds
and put them in the freezer for a couple of hours. When ready to serve, run each mold under warm water for a couple of seconds, then slide the popsicle out and ENJOY!
