Spinach and Feta Cheese Frittata
One of the classiest Italian comfort food: the frittata! High protein and low carbs easy meal idea!

In the meantime I’m still in Shanghai trying to sort myself out among thousands of things to do. One of the project I am working on is a cook book written with 10 other famous chefs here in Shanghai. The book is being sponsored by the Italian Cultural Center and money will go to charity.
One of the recipe I’ll be contributing to the book is this Frittata made with spinach and feta cheese. A great idea for a starter, finger food or also as a nutritious filling to your sandwich.
I don’t have step by step picture, but the process is very easy.
Here is the recipe!
Ingredients (serves 4):
- 4 eggs
- Fresh mint
- 100 g feta cheese, crumbled
- 250 g. Fresh spinach
- 1/2 tsp. salt
- 1 tbsp. butter
In a medium size bowl whisk the eggs with salt, pepper and chopped fresh mint. Crumble in the feta cheese.
Wash the spinach. In a skillet melt the butter, add spinach, salt and sauté’ for a couple of minutes. Pour in the egg mixtures and cook on medium for about 5 minutes then flip it over and cook the other side for 5 more minutes.
Cut your frittata into squares and serve!
This is a great eaten warm as well as cold.
