Mixed Grains and Herb Salad

Mixed Grains and Herb Salad

This side dish is packed with fibers and fresh herbs. It’s fresh, healthy and it goes well with roasted chicken or seared fish.

You could also add some crumbled feta cheese for a healthy and full meal salad!

I paired it to my roasted lime red snapper filet and loved every bite!

Ingredients:

  • 2 cups mixed cooked grains, such as bulgur, quinoa, brown rice, farro, barley
  • 1/2 cup finely chopped mixed fresh herbs, such as parsley, basil, thyme (or anything that you like!)
  • 2 teaspoons extra-virgin olive oil
  • juice of half lemon
  • Coarse salt and ground pepper

Grab a mix of grain, whatever you like. I happened to have this pre-made mix which I brought from Italy.
