Baked Sweet Potato Fries
I might be one of the few people on this planet who is not crazy for french fries. I am not a bi fan pf fried food in general. Guess that’s a blessing.
I do love potato though and in particular I live purple and sweet potatoes.
This “fries” are baked in the oven but are still nice and crispy. Read though the recipe to find out what are the tricks to NOT get them soggy and soft.
- 1 large sweet potato
- salt and pepper
- 1 tbsp cornstarch
- 1 tbsp coconut flour
- 1 tbsp extra virgin olive oil or coconut oil
- 1 tbsp dry Italian herb mix
Wash and peel the sweet potato
then cut it into strips
Season with pepper and dry herb mix – do not put salt now, this is one of the thing that would make your potato release water and get soggy when cooking!
Next step, drizzle them with olive oil (or coconut oil) and coat them in cornstarch and coconut flour. These 2 ingredients together will make sure your “fries” stay nice and crispy. Lay the potato on a baking tray
and bake them in pre-heated oven at 200 C for 20-30 min, or unti they are cooked and crispy
Remove from the oven, season with salt and serve!
