It’s Monday, I’m sick and just finished a LONG day at the office…let’s get cooking 🙂
Wish you all a wonderful week!
Ingredients (serves 2):
- 2 (4 oz) Ahi tuna fillets
- 16 fresh asparagus
- 1 tbsp extra virgin olive oil
- 1/2 small papaya
- 1/2 small onion
- juice of half lemon
- 5-6 fresh mint leaves
- salt and ground black pepper
- fresh chili (optional)
Wash fish and asparagus
Greased a grill pan with 1 tbs of extra virgin olive oil, get it nice and hot and start grilling your asparagus on both sides. When they are almost cooked, add the tuna and grill it on both sides (about 1 min each – depending on how well-done or raw you want your fish to be). Season with salt and pepper.
While the tuna and asparagus are cooking, in a bowl add chopped papaya, onion, salt, pepper, lemon juice, chopped mint leaves and sliced chili (if using).
Plate it by arranging asparagus on your plate, lay the tuna fillet on top and sprinkle with the papaya salsa. Drizzle some more olive oil and serve it up!
Dinner in less than 15 min! A dream coming true!
