Parchment-Baked Red Snapper
Put together red snapper, ginger and purple potatoes and you have a super healthy and nutritious dinner!
I am off to Italy tomorrow for a 3 week business trip which will give me some time to enjoy sunlight, blue skies, fresh air, the sea and of course my family and friends! I couldn’t be happier 🙂
But before I leave, I want to share with you what I made for dinner just a few nights ago, an easy meal to whip up in no time and with very little effort!
Ingredients serves 2):
- 12 oz of red snapper filet, skin on
- 1/2 tsp sugar
- 3 tbsp soy sauce
- 3 tbsp julienned fresh ginger
- 5 small roasted purple potatoes
Pre-heat oven to 200 C (400 F). In a bowl wish together soy sauce and sugar
julienne the ginger
Grab your fish fillet
place it in the center of a sheet of parchment paper, brush it with the soy sauce mixture and lay the ginger on top
Fold edges of paper to seal fish and bake for about 12 min, or until edges of paper start to brown.
Serve the fish right away with a side of roasted purple potatoes.
