Cauliflower Pizza with Greek Yogurt Pesto
Either you are on a low-carb diet, Paleo diet or have gluten intolerance, well this pizza recipe is gonna be a life saver for you!
The pizza crust is made using not flour, not almond meal, not dry coconut BUT…cauliflower! Yes!
The cauliflower is pulsed into a food processor until it resemble rice, then it is cooked and mixed up with a bunch of herbs and other ingredients to give it the extra flavor it needs. Then it is baked, topped and enjoyed!
I made this “pizza” for myself a few weekends ago and also taught a class last Sunday.
Here is the recipe if you want to give this a shot!
Ingredients (makes 1 serving)
For the crust
- 1 small head of cauliflower
- 1 tsp minced garlic
- 1/4 tsp salt and pepper
- 1/2 tsp dry herb seasoning
- 1 egg white
- 2 tbsp. grated Parmesan cheese
For the filling
- Olive oil (to drizzle)
- Fresh basil
- 1/3 cup mozzarella cheese
- 50 g Greek yogurt
- 2 tbsp basil pesto
- 1/2 large tomato, sliced
Cut florets out of cauliflower head
Wash and dry. Blend in a food processor until it looks like rice.
Move to a bowl, cover with plastic wrap and microwave for 6 min, stir and microwave for 6 more minutes. Let is cool down. Using cheesecloth squeeze out all water. Get it all out!
Mix the cauliflower with all the remaining ingredients
then spread mixture into pizza shape with thicker edges, bake at 180 for 15 min
Remove from oven and dress with Greek yogurt pesto, fresh tomato slices and mozzarella.
Place in the oven for 5-8 min until cheese melts. Add fresh basil a drizzle of olive oil and serve right away.
This is incredibly tasty and you will taste the cauliflower at all!
