Purple Potato Chocolate Chip Paleo Cookies
Cookies are my obsession, my addiction, my everything! There are very other few things that make me happy like a box of freshly baked sweet cookies. Ever since I was a little girl, I could eat dozens and dozens of cookies every day. Even now you will always find a batch of freshly baked cookies in my home.
Because of my recently discovered gluten sensitivity I had to come up with new and original recipes to please my sweet tooth.
You have seen me baking with almond flour, avocado, sweet potatoes, bananas. Today I will share with you this fantastic recipe which calls for purple potatoes! Yes you heard me 🙂
Rich in fiber, low in carbs, they are soft and tasty and beautifully purple!
Ingredients (makes 15):
- 1 cup mashed purple potatoes
- 2 tbsp honey
- 1/3 cup cashew butter
- 1 egg white
- 1/2 cup chocolate chips
- 1/2 cup dry coconut
- 1/2 tsp baking powder
- 1/8 tsp salt
Wrap up some purple potatoes into foil and bake at 200C for about 45 min or until cooked.
Peel them and mash them with a fork
Add the cashew butter, honey, egg white, salt
Stir until combined,
then add the dry coconut and baking powder. Stir until smooth
Fold in the chocolate chips. With an ice cream scoop portion out balls of dough
Bake at 180 for 12-15 min. Let them cool down on a wire rack
then store up to 1 week.
