DIET! yes you heard me. Came back to Shanghai 2 days ago after 3 weeks in Italy and when I stepped on the scale and saw that I gained 2 kgs I almost passed out for the shock!!!
So now it’s diet time. Weather is getting nicer, soon we will be wearing shorts and skirts and I CANNOT (repeat CANNOT) hold on this extra weight. So Paleo diet, here you come! Save me!
Honestly I like the Paleo diet and I often follow it even when I am not trying to lose weight. I find it to be healthy and it does really much suit my taste and needs since I have a grain and wheat intolerance. What I do miss on Paleo tho is dairy. I love my cheese and Greek yogurt and kefir and it’s hard to give that up.
I can say that I do tend to follow a slightly modified Paleo diet, without the grain and wheat, with lots of veggies, healthy fats and protein but with also some dairy. I feel balance is the key to any long-term program.
So to please my sweet tooth I have made this Paleo clementine cakes. This one is SUPER MOIST and fits perfectly as afternoon snack or at breakfast you like.
Here is the recipe!
Ingredients (serves 12):
- 500 gr clementines
- 3 eggs
- 2 cups almond meal
- 1/4 cup dry coconut
- 1/4 cup sugar-free syrup
- 1/4 tsp salt
- 1/2 tsp baking powder
- powdered sugar to dast
- 1 tbsp coconut oil
Wash your clementines
Put them n a pot, cover with cold water and boil for 2 hours.
Drain, cool and add cooked fruit to a food processor (you can remove the skin if you don’t like its bitter-ish flavor). Pulse until finely chopped
add eggs, vanilla and sugar-free syrup. Pulse until ingredients are combined
add dry ingredients and process until you get a creamy mixture
Grease a cake pan (9*9) with coconut oil. Pour in mixture and bake for 40-45 min in pre-heated oven at 180 C.
Remove from the oven and let the cake cool down completely. Slice, dust with powdered sugar and serve!
This cake is SUPER moist. It keeps well for a few days. And look at the macro! One serving has got only
