Grilled Zucchini Smoked Salmon and Burrata Deli Plate

If you are looking for an easy starter which is nicely plated and which will let you guests say WOW, well keep reading.

I made this for a dinner with a few friends when I got back from Italy. I ordered a nice 200 g burrata mozzarella from www.kateandkimi.com together with some yellow and green zucchini and a bag of smoked salmon. I grilled the zucchini and dressed everything with simple extra virgin olive oil, salt and ground black pepper.

Here is the step by step recipe!

Ingredients (serves 4)

  • 200 g burrata mozzarella
  • 1 green zucchini
  • 1 yellow zucchini
  • 2 tbsp extra virgin olive oil
  • 80 g smoked salmon
  • fresh arugula
  • salt and pepper
  • kalamata olives

Wash the zucchini, slice them

and grill them

on a plate cross 2 slices of zucchini, one yellow and one green

lay about 20 g of smoked salmon on top and some fresh arugula

add a slice of about 50 g of burrata. Season with ground pepper, salt and drizzle of extra virgin olive oil

Serve it up!
