Zoodle Primavera Pasta (Paleo)

Zoddles are my new addiction! I had them for the first time 3 years ago when I went to Thailand for a detox holiday. I did 6 day of full fast and on the 7th I was on raw food and that’s when they served me these delicious “noodles” made out of zucchini and served with a raw marinara sauce.

Back to Shanghai I have made them using many different sauces and pestos! The recipe I am sharing with your today uses a super healthy sauce made with fresh cherry tomatoes, organic extra virgin olive oil, basil and some pine nuts for some extra crunchiness.

Hope you guys like it!

Ingredients:

  • 1 pint halved cherry tomatoes
  • 1 thinly sliced garlic clove
  • Pinch of red-pepper flakes
  • 3 tablespoons extra-virgin olive oil
  • 1 large zucchini
  • Toasted pine nuts
  • Grated Parmesan (not for the paleo version)
  • Fresh basil
  • 1 tst oregano

First thing first, gather all the ingredient you need for making the sauce: tomatoes cut in halves/half, fresh basil, extra virgin olive oil, chili flakes, pine nuts, ry oregano and garlic

With a spiralizer make the strands from zucchini.

In a skillet sauté tomatoes, capers, garlic, and a pinch of red-pepper flakes in olive oil for 1 minute over medium-high; add “noodles.”. Cook, tossing, 1 to 2 minutes.  Plate it then sprinkle with pine nuts, Parmesan, and basil.

Serve it up!
