atcha Cashew Milk Chia Pudding
10 minute quick, easy, nourishing, grab and go breakfast packed with super foods!
Today I have a delicious matcha chia pudding recipe for you! Matcha is packed full of antioxidants, vitamins, minerals and has a calming effect on the body. It’s definitely one of the “trends” all over social media, but for good reason! It tastes delicious, has a beautiful green color, and works perfectly in chia pudding.
Chia seeds are rich in fiber, omega-3 and omega-6 fatty acids, and protein. These little seeds are a superfood for anyone eating a plant-based diet, as well as for non-vegetarian people who are following a high-fat type of diet.
Chia pudding is also one of the few breakfasts that actually keeps me full for longer than an hour. I’m a bottomless pit and will graze all day long, but this matcha chia pudding does the trick. Plus you make it the night before and it’s there ready for you to grab and go on your busy mornings!
I used my homemade cashew milk, you can replace that with any nut based milk or coconut milk as well.
Ingredients (1 serving):
- 1 cup cashew milk
- 1 tsp matcha powder
- 1/4 cup chia seeds
- fresh raspberries
- gre3n coconut chips
Stir matha powder into the cashew milk. Add the chia pudding, cover and refrigerate overnight
The following morning (or 8 hours later), blend the pudding until smooth. Portion it into jars or glass containers and top it off with fresh raspberries and crashed gre3n coconut chips.
