Seedy Quinoa Bars with Kaya 浓意 Coconut Jam
High in protein and healthy fats, this bars will keep you full for long and will satisfy your cravings. Keep one in your bag for those “hungry times”!
I don’t know about you, but I have such a big appetite. My friends make fun of me all time, joking around on how I am always the last one to stop eating. My day starts with a filling breakfast followed by a cup of coffee with cream and an apple a few hours later at the office. Then at 12 I get my lunch (generally a healthy salad made with lots of greens, lean protein, nuts, seeds and dressed with my favorite extra virgin olive oil). Then most likely mid-afternoon I will need to pop something else into my mouth, specially if I have an evening fitness class planned. Dinner is around 8 pm (latest) with some more lean protein, greens, and something sweet.
I generally always have with me in my bag some raw nuts to snack on, but recently I was getting a bit tired of them and needed something new. Definitely needed something high in healthy fats, as that’s what keeps me full for longer. So I decided to make these bars with seeds, quinoa, raisins and Kaya 浓意 Coconut Jam.
The bars are really simple, you will only need a food processor, simple ingredients and an oven. Kaya 浓意 Coconut Jam definitely adds that extra flavor which makes them super delicious!
You can store them in your fridge for 2 weeks, but trust me they won’t last that long!
Ingredients (makes 12 bars):
- coconut oil
- 1 cup chopped almonds
- ½ cup raw quinoa, rinsed
- ¼ cup raw pumpkin seeds
- ¼ cup raw sunflower seeds
- 1 cup dried raisins
- 2 tbsp Kaya 浓意 Coconut Jam
- ¾ teaspoon kosher salt
Preheat oven to 350 C. Coat 8×8” baking pan with coconut oil; line with parchment, leaving overhang on all sides.
Chop up the almonds

Then place all nuts, seeds and quinoa on a baking tray
and toast them, stirring occasionally, until golden brown, 10–12 minutes. Let cool.
Reduce oven temperature to 200°. In a food processor place raisins, Kaya 浓意 Coconut Jam, salt, and 2 Tbsp. water
process until smooth
Stir in toasted almond mixture
Press firmly into prepared pan
and bake until no longer sticky, 20–25 minutes. Let cool, then cut into bars.
