Homemade Fruit & Nut Mix
Perfect on-the-go snack to fuel your body when you need some extra energy. Select the nuts and dry fruits you like and make it at home to save those extra $$$!
When I was on vacation in Italy this past July, I have literally spent a fortune on fruit & nut mix. They were my daily snack at the beach, to help me keep full and have lots of energy for my long swims and walks along the seashore. This simple mix tosses together a combination of good-for-you ingredients such as almonds, Brazil nuts, cashew and pumpkin seeds for a dose of heart healthy fat with raisins and dried papaya for fiber and vitamins! All this made even tastier by an extra addition of coconut chips!
You can customize it to your tastes using whatever nuts and dry fruit you like.
This is not just a snack but also a great topping for your salad.
- 1/3 cup cashew nuts
- 1/3 cup Brazil nuts
- 1/3 cup almonds
- 2 tbsp pumpkin seeds
- 1/4 cup dried papaya
- 1/4 cup raisins (I used dark and golden raisins)
- 1 bag of gre3n coconut chips
Gather your nuts
and your dry fruits with coconut chips
I like to mix all up on a tray first
then move it into a jar container where I store it for…..as long as it last….
which in my case is…..mmmm, 1 or 2 days???
