Bright in color and with a wonderful taste this easy recipe marinates the chicken in herbs, olive oil and turmeric. Sear it on a hot pan or bake it in the oven!
Turmeric is a super food that does wonders to our health. The yellow color root, belongs to the ginger family, is anti-inflammatory, anti-oxidant, has wound healing and other medicinal benefits.
I add it to my morning “elixir shots” , smoothies, lattes and I love to also cook with it. This chicken recipe is super easy and you can pair it with any roasted veggies, salads, potatoes and grains. I added some grilled bell peppers, Alce Nero farro stew (spelt) that I made a few days before and some fresh baby spinach. Drizzle the whole plate with some Greek yogurt for some extra flavor!
Ingredients (serves 3):
- 2 roasted red bell peppers
- 500 gr skinless and no-bone chicken tights (6 pieces)
- 1/3 cup extra virgin olive oil (I used Alce Nero Organic)
- 2 tbsp dry oregano
- 1 tbsp ground turmeric
- 2 tbsp Greek yogurt
- 1 cup of cooked grains of your choice (barley, quinoa, couscous, mixed grains, spelt, oat kernels,..)
- salt and pepper
- 2 cups baby spinach, raw
Path the chicken dry
In a bowl combine oil, oregano, salt, ground pepper and turmeric
Stir around until ingredients are all well mixed. Add the chicken and let it marinate for at least 30 min. You can also cover it with plastic wrap and let it rest in your fridge up to 12 hours.
When ready to cook, heat up your skillet on medium and when hot add the chicken with its marinate.
Cook 8 min per side or until meat is cooked and outside is nice and crispy.
Plate it with the roasted bell peppers, grains and some fresh baby spinach.
For an extra kick of flavor, drizzle some Greek yogurt!
