Super Creamy Tofu and Dragon Fruit Smoothie Bowl
The protein from the tofu will keep you full for long and the sugars from the fruit will give you that burst of energy you need to start the day!
I am obsessed with smoothie bowls recently. They make such a great breakfast and the fact that you actually scoop them out instead of sucking them up thorough a straw as normal smoothie, makes them an even more satisfying meal. I prefer to have “green” one, rich in veggies and with just a little of fruit, and to incorporate some protein, I generally add some pea protein powder.
This time I decided to take things up a notch and play around with tofu. Tofu is so mild in flavor which makes it perfect to be used in many different ways. You guys might remember my Tofu Panna Cotta, or my Vegan Chocolate Pots and Lemon Raw Pudding recipes.
Today I want to share with you my new idea of incorporating tofu into my recipes, and that’s using it in making a smoothie bowl. The tofu adds that extra richness and packs it with vegan protein! The beautiful color is given by the red dragon fruit, which is another amazing, low-glycemic fruit which will not spike your insulin level!
Ingredients (serves 2):
- 200 g silken tofu
- 200 g dragon fruit
- 1 tbsp Tropeaka coconut water powder (optional)
- 6-8 ice cubes
- 2 tbsp of my fruit and nut mix
Place the tofu into cheesecloth and squeeze out any access water, then transfer into a food processor with the diced dragon fruit and ice cubes
Process until creamy. Add the coconut water powder (if using) and pulse until combines
Divide the smoothie between 2 bowls and top it off with a handful of fruit & nut mix!
This is soooo creamy and rich in flavor. The protein from the tofu will keep you full until lunch!
