DNAFit – Low Carb Meal: Pan-fried Salmon with Seasonal Veggies

It’s a one-pan full meal which is easy to make, packed with healthy fats and protein and very low in carbohydrates. Perfect for those on a Keto or Paleo diet or for those who should be follow a low-carb diet based on their DNA!

After my first recipe for DNAFit Mediterranean profile, today it’s time to take care of those who, after their saliva swab, have found out they better follow a low-carb diet.

In DNAFit meal plan, the Low Carbohydrate Diet is not a calorie-controlled diet as such. This has been suggested to be the most successful diet for weight loss for people who are highly sensitive to carbohydrates. At least 3 scientific studies have been used as references to calculate the percentages of macro nutrients. People in this group should choose slow releasing carbohydrates which, when mixed with protein, help balance blood sugar to enable your body to burn fat, instead of storing fat. Research suggests that higher unsaturated fats are more successful when combining this with a low carbohydrate diet. Unsaturated fats include olive oil, avocados, oily fish and olives.

Today’s recipe follows exactly these directions. We get lots of healthy fats from extra virgin olive oil, avocado and salmon and plenty of fibers and vitamins from slow- releasing carbs such us zucchini, squash, endives and radicchio!
When reading this recipe you might get a bit intimidated by all the different ingredients we use, well don’t! In fact the beauty of this dish is that it require to use (AKA clean) only one pan! I, like most of you people, LOVE to cook but HATE the washing afterwards, so when possible, I try to minimize the amount of cooking tools that I need.

 

Ingredients (serves 2):

  • 2 of 200 g salmon fillets
  • 2 cloves of garlic
  • 1/2 zucchini
  • 1/2 zucchini squash, yellow
  • 2 tbsp extra virgin olive oil (go organic if you can)
  • 1/2 large eggplant
  • 1 endive
  • 2 round red radish
  • 1/2 radicchio head (round or oval, both OK)
  • pink Himalaya salt and ground black pepper
  • 1 tsp chopped fresh flat-leave parsley
  • 1 tsp chopped fresh mint
  • 1 avocado, ripe and ready to eat
  • a bunch of purslane 

Start off by chopping up the zucchini

do the same with the eggplant

cut the yellow squash into strips/wedges

In a skillet heat up 1/2 tbsp of extra virgin olive oil, add 1 clove garlic and the diced zucchini, season with salt and pepper and cook on medium-high for about 5 min. Remove from heat and add the chopped parsley. Set aside

In the same skillet add another 1/2 tbsp of extra virgin olive oil, the other clove of garlic and the diced eggplant. Season with salt and pepper and cook on medium-high for about 5 min. Remove from heat and add the chopped mint. Set aside.

Pat the salmon dry using kitchen towel, season with salt and ground black pepper on both sides

In the same skillet now, seared the salmon fillet. It will take about 3 min per side. Next to the fillet, you can also seared the yellow squash at the same time.

While the salmon is cooking, wash and cut the endive, radicchio and slice the radish. Also divide one avocado in half.

Time to plate now! Serve your salmon fillet with the fresh veggies and roasted veggies, top it off with 1/2 avocado, garnish with some purslane and season with a drizzle of extra virgin olive oil!
